Caesar salad with chicken fillet

Ingredients for a great salad

  • 1 bag of Piperati salad "From the Vezyroglou Farm"
  • 4 tbsp. grated parmesan
  • 100 gr. boiled corn

For the chicken

  • 2 chicken fillets, breast
  • 250 gr. hot chicken broth
  • Salt and pepper

For the croutons

  • 4 slices of village bread
  • 1 clove garlic

For the sauce

  • 4 anchovy fillets in oil
  • 1 tbsp. mustard
  • 1 tbsp. mayonnaise
  • 1/2 clove garlic
  • 3 tbsp. lemon juice
  • 12 tbsp. olive oil
    • Wash and dry the salad well. Preheat the oven to 200 ° C. Pass the chicken fillet with salt and pepper and put it in a small pan. Add the hot chicken broth and cook for about 30 minutes, until the chicken is well cooked, gets a nice color and is left with a little juice. Set aside to come to room temperature.
    • Bake the croutons at the same time. Put the slices of bread in a pan and bake them in the oven for about 10 minutes. When the slices are ready, pass them with the garlic, just to flavor them. Then cut them into pieces.
    • Prepare the sauce. Grind all the ingredients together in the multi until you have a nice firm sauce.
    • We prepare the salad. Put the vegetables, the croutons, the grated Parmesan. the corn and two tablespoons of the sauce in a bowl and mix. Add the chicken and serve.
